Sauteed Mustard Greens with Balsamic and Honey

2 large handfuls mustard greens with stems, cleaned well
1 scallion, snipped
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Balsamic vinegar
1 Tablespoon honey
Salt and pepper to taste.

1.  Heat oil in skillet on medium high.  Add mustard greens, snipped scallion, salt, and pepper.
2.  After greens have cooked a few minutes, add vinegar and honey.  Cook to desired doneness.

Enjoy with a crusty bread.
